Parsnips and Carrots

Last fall I planted parsnips and carrots. I guess if you plant them at the right time they will grow till winter and then you can keep them in the ground till spring and harvest as needed. It seems that is correct, at least in my area. Although I failed to plant mine early enough because they never got very big. I know you can’t tell from the picture but they are about the size of my thumb. I wish I would have wrote down when I planted them so that this year I could do it earlier but I didn’t. Lesson learned, keep a garden diary.

    they’re very testy those Parsnips. Fall planting is best and holding them over until now is supposed to make them a little sweeter but they’re already so sweet by nature. PS – the Parsnips you see in the store are ridiculous and surely filled with chemicals to even get them that big. Yours look fab!

    Mmmm… parsnips are tasty! So sweet and yummy when roasted up, and super tasty in soups. That is so freakin’ cool that you have grown your own!
