Waffles

Does anyone have a good recipe they would like to share.

    These are my favourite waffles. We have no particular need to be gluten free, but these are so light and crispy that they are the recipe that I keep coming back to. Enjoy!

    Gluten Free Waffles

    1 cup Rice flour, brown or white or mixed
    (or if you are not worried about gluten free you can sub in other kinds of flour. I often do half whole wheat and half brown rice)

    ¼ cup Tapioca Flour

    ½ cup Potato Starch (not potato FLOUR)

    2 tsp Baking powder

    1 tsp Baking Soda

    1 tsp Salt

    ¼ cup oil

    2 eggs

    1 tsp Sugar (but I use 2 ;)

    1 ½ cups Buttermilk
    (but if dairy is an issue you can use use soy milk.
    If you use Soymilk you might not need a whole cup and a half, maybe just a cup)

    Optional: ½ tsp of cinnamon or ½ tsp vanilla

    Mix all ingredients in a large bowl with a whisk, and pour into waffle iron ½ cup at a time. Cook as per the waffle iron specifications.
