Once a Month Mom – September Menu

I did the September menu on Sunday and spent eight hours completing it. I also spent two hours the night before prepping that means it took me a total of ten hours to do this.

My grocerys totaled $180.00 thats 3.21 a meal!

Breakfast
â—¦Apple Streusel Muffins – Either I did not cook these long enough or there was too much liquid in the recipe because mine were a bit on the doughy side.
â—¦Silver Dollar Pear Pancakes – These turned out beautiful! I do recommend having a slightly thicker dough then normal.
â—¦Breakfast Eggwiches – Super easy and I can not wait to have one.

Lunches
â—¦Corn Dog Muffins – Super easy and quick to make.
â—¦Black Beans & Brown Rice – I am not a huge fan of rice and beans so we will see if I like this.
â—¦White Chicken Chili – This did not turn out as thick as I was expecting but it smells so good!
â—¦Carole’s Chili – Not a lot of ingrediants so I am really courious as to what this will taste like.
Dinners
â—¦Freezer Beef Stew – Looks yummy and really easy to prepare.
â—¦Deconstructed Broccoli and Cheese Stuffed Chicken Breasts – This just looks really heavy to me. The kind of food that ends up like a lump in the tummy.
â—¦Ultimate Beef Stroganoff – My husband is looking forward to the beef!
â—¦Baked Ziti – This seamed to have really small portions, I will have to remember to have extra big and filling sides with this.
â—¦Mexican Cornbread Casserole – I think I could have used a bit more cornbread for this.
â—¦Chicken Marsala – I am not a big fan of mushrooms so this might just end up being just for the hubs and the portions seemed small.
â—¦Chicken & Chilies Casserole – My husband is really eager to try this one :)
â—¦Parmesan-Paprika Pork Chops – At first it seemed like there was too much dry ingrediants but in the end it was perfect.

    That looks like an interesting site! In some ways, it is a very appealing concept. But in others, it’s definitely a little scary for someone like me, who (way too often) makes spur-of-the-moment cooking decisions based on what sounds yummy right now. You’ll definitely have to let us know how it works for you!

    Wow, as a student I might really need to get in on this! What a great site, thanks for pointing us to it. Of course, my roommate and I like to have impromptu discussions while we’re both in the kitchen, stirring our respective pots, so we’ll have to see … The recipes look really interesting.

    Meal planning is so tough! But that’s a really great goal you’ve set for yourself. Hopefully this will help with the simplification :-) , and I say treat yourself sometime in the first week or two for a job well done :-) !

    I think you’ll be happy with the concept, although the meals sound delicious and way fancier than anything I would make for dinner.

    A friend of ours is a bachelor and doesn’t enjoy cooking so he does something like this every week. He shops on Saturday, cooks all day Sunday (while watching NASCAR and football) and makes what he calls plates. He puts everything he will eat on a plate–meat, veggies, etc.–covers it with plastic wrap and sticks it in the freezer. Each night he picks what he wants, pops it in the microwave and is good to go. He swears by it.
